标题：Os discursos envolvendo o Direito humano à Alimentação adequada e segurança alimentar e Nutricional na prática dos profissionais de saúde [The talks involving the Human Right to Food and Nutrition and Food and Nutrition Security in the practice of health]
摘要：O Direito Humano à Alimentação Adequada - DHAA e a Segurança Alimentar e Nutricional - SAN são temas que permeiam muitos debates no Brasil, principalmente no âmbito das políticas públicas de alimentção e nutrição. Ao trazerem em seus conceitos o acesso ininterrupto à alimentação adequada à todos os seres humanos, necessitam para sua efetivação uma abordagem interdisciplinar e intersetorial. O presente artigo trata-se de uma metasíntese dos artigos que contemplam metodologias qualitativas envolvendo a alimentação e nutrição, no âmbito da atenção básica à saúde. Coube no presente estudo identificar os diferentes discursos sobre alimentação e nutrição na ótica do DHAA e SAN no que concerne à atuação do nutricionista, e outros profissionais em saúde coletiva e, se este tem ou não interferido no planejamento e nas ações de alimentação e nutrição desenvolvidas na atenção básica de saúde. Realizaram-se buscas de artigos em portais de periódicos. Inicialmente obteve-se 92 artigos que após a leitura e aplicação dos critérios de inclusão e exclusão, resultaram em 43 trabalhos. Após leitura dos artigos originais 08 artigos foram selecionados. Foi realizada a sistematização das informações,seguida da caracterização das principais temáticas abordadas, o tipo de estudo, o marco-teórico e a reinterpretação das análises de dados, originando 3 categorias e 8 subcategorias de análise. Evidenciou-se uma discussão limitada e fragmentada de DHAA e SAN presente na prática dos profissionais de saúde, em especial do nutricionista. Por tratar-se de um tema de caráter intersetorial para sua efetivação, percebe-se a necessidade desta discussão ultrapassar os campos de conhecimento específico de cada profissão, iniciando com a formação acadêmica. Ainda assim, reitera-se a necessidade da definição de indicadores de DHAA e SAN nos espaços de atuação dos profissionais de saúde para a partir destes fomentar a intersetorialidade e o controle social em alimentação e nutrição.ABSTRACT - The Human Right to Food and Nutrition (HRFN) and the Food and Nutrition Security (FNS) are subjects involved in many debates in Brazil, mainly in the scope of food and nutrition public policies. On account of bringing into their concepts the uninterrupted access to the adequate food to all the human beings, it is necessary an interdisciplinary and inter-sectoral approach to its effectively. This paper is a meta synthesis of articles that contemplate qualitative methodologies involving food and nutrition in the scope of primary care in health. Identify the different talks about food and nutrition by the HRFN and FNS point of views concerning the nutritionists practices, and others public health professionals and if this has or has not interfered in the planning and actions of food and nutrition developed in health primary care, was contemplated in this study. Search of articles in database was done. Initially 92 articles were obtained and after the application of criteria of enclosure and exclusion, turned into 43. After reading the originals, 8 articles were selected. A systematization of the information was done followed by the categorization of the main themes mentioned, the kind of study, the milestone and the reinterpretation of data analyses, originating 3 categories and 8 subcategories of analysis. A limited and fragmented argument of HRFN and FNS present in the practical of health professional, specially nutritionists was showed up. By treat of a subject of inter-sectoral character for its effectiveness, the necessity of this argument goes beyond the fields of specific knowledge of each profession, initiating with the academic formation was perceived. Furthermore, reiterate the need of definition of HRFN and FNS indexes at the health professionals places of practices and from these promote the inter-sectoral and the social control in food and nutrition.Keywords: Human Right to Food and Nutrition; Food and Nutrition Security; Health Professional; Meta-synthesis.
