摘要:Nutrient consumption patterns of low-income households differ significantly by location of residence. The rural West, the rural North Central region, and the urban South generally have the highest proportion of low-income households with nutrient levels below the Recommended Dietary Allowances (RDAs). More than 20 percent of all low-income households in this study consumed food (from household food supplies) that furnished less I than the RDAs for vitamin A, vitamin B 6 , calcium, magnesium, and food energy. Participation in the Food Stamp Program has a positive and significant influence on nutrient consumption. Overall, nutrient consumption is more responsive, to increases in bonus stamp value than to increases in income but is not highly responsive to either.
