摘要:The nutritional and therapeutic properties of the mare (Equus caballas) milk have been known since ancient times and in Central Asia and Eastern Europe, not only mare milk but also fermented mare milk products are traditionally produced and consumed. Mare milk is an alternative food, especially for immunocompromised children, the elderly and at the same time for individuals with cow milk protein allergies. Mare milk has been successfully used as an alternative food for babies with food allergies. The purpose of this study was to determine the concentrations of 17 elements in mare milk samples and revealing the potential benefits and risks in terms of human and animal health. Elements analyzed using by ICP-MS assisted microwave digestion. For bivariate analyses of variables, nonparametric Spearman's correlation coefficient test was used. The mean concentrations of Ca, K, Na, and Mg were determined as 1033.2 mg/L, 816.1 mg/L, 496.3 mg/L and 87.0 mg/L, respectively. The concentrations of Cr, Mn, Co, As, Cd, Tl, and Pb were below the detection limit. Strong correlations were detected between the elements: Mg- K, Mg-Ca, Mg-Ti, Mg-Ni, Ca-Ti, Ca-Ni, Ca-Zn, Ti-Ni, Ni-Zn. This study of milk of Arabian mares provides data of seventeen element content and their variations through the lactation period.
