摘要:The aim of this work is to enhance the safoutree “orchard” of Brazzaville by carrying out themorphological and physicochemical characterization ofthe fruits collected from 50 trees in the 5 districts, at therate of 10 trees per district. The characterization of thefruits made it possible to identify the types of size, classand category of safous the most found and the mostcultivated in this large orchard. This study showed us thatthe Safous of Brazzaville form a very homogeneous groupof fruits and resemble those already found in theliterature. Descriptive studies on morphology indicate thatit is the fruit with the sphericity index (width/length) ofaround 0.5 that is most commonly found in thesub-region. The safous of Brazzaville are similar to eachother and, ultimately, resemble the type of safous the mostsold in the sub-region. The oil extracted from the pulp hasthe following major fatty acid profiles: C16: 0 C18: 1C18: 2 C18: 0 C18: 3 followed by C16: 0 C18: 2 C18: 1C18: 0 C18: 3 with average palmitic acid contents <50%.Oleic and linoleic acids have almost similar contents withvalues, respectively equal to 26.8 (±5.4) and21.5(±4.3)%.
