摘要:Vegetables are an indispensable food in our daily diet.They can easily absorb nitrite,causing food safety problems.This paper determines the nitrite content of vegetables under different conditions and provide a basis for assessing food safety risks.Different conditions of vegetable storage,nitrite content will be different.This paper improves the detection method on the basis of the China National Standard (CNS),explores the changes of nitrite content of vegetables under different conditions and analyzes the reasons.Studies have shown that the nitrite content in leafy vegetables was higher than that in melon or fruit vegetables and root or stem vegetables.The same vegetables were stored at different temperatures,the nitrite contents of vegetables at room temperature was significantly higher than refrigerated storage and frozen storage.The same kind of vegetables were stored in different ways after processing,the variation of nitrite content is: cooking processing was higher than steam processing,steam processing was higher than frying processing.The nitrite content of pickled vegetables,shows a rapid increase,then a slow decrease,and tends to a stable value.According to the national food hygiene and safety standards,this paper evaluates the food safety of the tested vegetables,and makes reasonable recommendations for daily storage and consumption of vegetable.
