摘要:The Vitis vinifera L.grape species is a fruit that is the most prevalently grown in the whole world and has economic significance. It is known that, due to its climate conditions, Turkey has rich resources in terms of Vitis vinifera L. With this study,we aimed to determine the phenolic, vitamin and fatty acid contents of the Okuzgozu and Bogazkere varieties of Vitis vinifera L.and see the effects of these contents on antioxidant activity. Fatty acids in the lipid ex-tract were analyzed by gas chromatography after conversion into methyl esters. For flavonoid and vit-amin analyses, a high-performance liquid chroma-tography device (HPLC-UV, Shimadzu) was used. Antioxidant activity was determined by Radical Scavenging Activity(DPPH) and Lipid Peroxidation (MDA)experiments. As a result of the study, some saturated and unsaturated fatty acid, phenolic com-pound and vitamin contents of the two varieties were obtained.It was observed that the amounts ofunsatu-rated fatty acids, whose effects on antioxidant activ-ity are known, in the Okuzgozu variety were signifi-cantly higher than those in the Bogazkere variety. The results on phenolic and vitamin compounds re-vealed higher amounts in the Okuzgozu variety in comparison to Bogazkere as in the case of fatty ac-ids. The finding that these contents and antioxidant activity were in proportion suggested that the antiox-idant effect of the Okuzgozu variety is higher. If the substances that provide this effect are correctly iso-lated from the plant, they may be used beneficially in both the food and pharmaceutical sectors.
