  • 摘要:Fruits and vegetables (FLV) are sources of vitamins, minerals and fiber. Its frequent consumption can help maintain health, physical and emotional well-being, in addition to contributing to the economy and even the environment. Despite the possible benefits related to its intake, in addition to the easy access to information about the importance of a healthy diet to increase the quality of life, it is noted that the consumption of FLV is still low, in disagreement with the recommendations of the Organization of Health (WHO) and the Ministry of Health (MOH). During the pandemic, this situation worsened, with the consumption of FLV reduced, in many cases, being replaced by ultra-processed foods. There are several reasons for the low consumption of FV, such as the scarcity of financial resources, lack of consumption habits, limited availability and problems related to access. Thus, the research aimed to evaluate the consumption of FLV during the COVID-19 pandemic by students from the Federal Institute of Education, Science and Technology of Pernambuco (IFPE) Campus Cabo de Santo Agostinho (CCSA). A bibliographic research was carried out on FLV, changes in the pattern of food consumption during the pandemic and the benefits of daily FLV intake. From this, a virtual questionnaire was created (via Google Forms) to describe the eating habits of CCSA students with regard to FLV consumption during the pandemic, which was answered by a total of 102 students. From the answers, it was noticed that only 18.15% of respondents consume FLV every day, which demonstrates that FLV consumption during the pandemic proved to be insufficient, in disagreement with the parameters of the WHO and the MS. It was also possible to perceive that some important indicators to promote a change in the consumption of FV by the interviewees would be the reduction of prices and a process of food reeducation, in the sense of inserting the FLV daily in the diet of the interviewees.
