摘要:The enthralling and prominent beauty of Uttarakhand state is considered to be one of the foremost destinations for travelling around by International and National tourists. Tourism plays a crucial role in the overall progression of a destination, state and country. It might help in creating new job opportunities and also to spread the miscellany of tradition and culture of the destination. Culinary tourism generally attracts the tourists through cordiality and hospitality. The traditional food served in a conventional style or with fusion and innovative method might charm the tourists at a greater level. Hence, this study aims to explore the nutritive aspect of the delectable cuisine of Garhwal Himalayas. The study is based on primary study as well as secondary data collected through research papers, magazines, journals, books, internet and also through focus interviews. As observed, the tourism of Uttarakhand has a rapid growth rate due to its picturesque beauty, adventure tourism and pilgrimage attractions etc. but the culinary tourism of the region has not caught the eye of many despite of the state’s ethnic produce and use of indigenous herbs and native spices which are considered to be highly therapeutic, nutritive and remarkably delicious.
