  • 摘要:

    In order to investigate the process of ultrasonic degradation of gelatin, three types of gelatin were irradiated with ultrasound. Then the contents of each fraction of the samples were determined with HPLC. As a result, it was found that the kinetics of ultrasonic degradation of fraction H (higher component) is first order. And the degradation rate constants ( k ) varied with type and concentration of gelatin.
