  • 摘要:

    Elementary work for gelling characteristics of gelatin is presented in this paper. The contents are (1) summary of my study for the past several years (1988-4996), (2) a general review of many studies of gelation and sol-gel transformation of gelatin in this society. I consider that the gelatin is continuously proposing attractive themes from now on in many applications.
