  • 摘要:

    A nose clip for swimming was used to eliminate influences of flavor on taste during sensory tests of sake. The nose clip did not affect sensitivity of tasting. Sensory tests using a nose clip showed that the flavor of sake decided its maturation degree of taste, and that the quality as unpasteurized sake depended on its flavor rather than taste.
