摘要:Aromatic and medicinal plants are more asked in trading. Especially for some endemic plants as Thymus Satureioides, industrials are in need to keep it available to custo mers all the year. Thus, t he conservation process allows the preservation and the storage of plants with great hygienic and safety quality. However, these processes can modify the food proprieties. Hence, we are interested in the effectiveness of preservation processes on the thermodynamic properties. The sorption isotherms were investigated using saturated salt solution method, at temperatures in the range of 30, 40 and 50°C and water activity ranging from 0.05 to 0.9. The experimental data of moisture sorption were exploited to identify the thermodynamic properties of the witness and conserved thyme such as differential enthalpy and entropy of sorption. The experimental data showed that enthalpy-entropy co mpensation theory was related to the moisture sorption conduct of thyme.
