摘要：O presente trabalho visa apresentar, de forma simples,um estudo de natureza académica efetuado com vista àtentativa de implementação de uma unidade industrial deprodução de chamuças doces. O trabalho foi realizado noâmbito da unidade curricular de Equipamentos e Instalações eIndustriais do curso de Engenharia Alimentar da EscolaSuperior Agrária de Viseu.Os objetivos do trabalho incluem a descrição do processoprodutivo e cálculos de projeto, nomeadamente no querespeita a balanços mássicos; a caracterização da empresa erecursos humanos; breves considerações sobre o mercado alvoe uma resumida análise SWOT; projeto da linha de produção,que inclui layout e equipamentos; considerações relativas aosefluentes gerados no processo; e, por fim, uma análise ligeira de viabilidade económica
其他摘要：The present paper presents in a simple way a studyof academic nature made in order to attempt to implement anindustrial plant to produce sweet samosas. The work wasperformed within the subject of Industrial Equipment andFacilities of the course on Food Engineering in EscolaSuperior Agrária de Viseu.The objetives of the work include the description ofthe production process and design calculations, in particular asregards the mass balances; the characterization of thecompany and human resources; brief considerations about thetarget market and a summarized SWOT analysis; design of theproduction line, which includes layout and equipment;considerations relating to the effluents generated in theprocess; and finally a slight analysis of economic viability
