摘要：In the present article the data of purifi cation procedures, drying and autholysis intensifi cation of winery yeasts biomassis shown. The follow methods for intensifi cation have been used: the different water volumes utilization, differentNaHCO3 concentration and sediments washing time, autholysis induction factors, different temperatures, autholysis timeand biomass drying time.
