摘要:This work was developed through a literature review with the aim to investigate the association between the consumption of a diet high in trans fat and the development of cardiovascular disease. The results of the studies show a positive association, mainly due to the change in the lipid profile, with the increase in LDL cholesterol ("bad") and a decrease in HDL ("good"). Scientific evidence indicate that ingestion of a diet rich in trans fat is associated with increased incidence of cardiovascular disease were observed. This positive association indicates that besides the necessity for people to think and review their eating habits is necessary that there is a change in the food industry (which uses trans fat as a basic ingredient for the manufacture of many different products) to decrease or even eliminate the amount of this ingredient.
