摘要:For the determination of dehydroacetic acid, the color reaction of salicylaldehyde is usually employed. Although salicylaldehyde has been said to react with the CH3CO group in 3-position of dehydroacetic acid, the reaction mechanism is not well known. The purpose of the present investigation was to clarify the reaction mechanism of salicylaldehyde for dehydroacetic acid and to determine the interfering substances on detection of dehydroacetic acid in salicylaldehyde color reaction. It may be concluded from the present results that coloration of dehydroacetic acid with salicylaldehyde was not due to the CH3CO-group in 3-position of dehydroacetic acid, but caused to the acetone formed by alkali-cleavage of dehydroacetic acid. Coloration with salicylaldehyde was observed with parasorbic acid, rhamnose, fucose, and limonene among the substances not mentioned by Braunstein and Thomson.
