摘要:Odor generation by 7 strains (5 species) of fungi cultured on various media was studied. A moldy odor was recognized in the off-gas of carbohydrate-containing media (Oatmeal and PDA), and 2-MIB and geosmin were detected in small quantities. On the other hand, a rotten odor was generated from protein-containing media (MY, MHA and PDA medium with methionine), and MM, DMS and DMDS were included in the off-gas at concentrations of μg/L headspace gas on PDA medium with methionine. The kind of nutrient in the medium is thought to be closely connected with characteristics of odor generation. Some fungal species produced both moldy and rotten odorants. In fungi cultured on PDA medium with 1, 000ppm methionine, concentration of moldy odorants did not vary greatly after 3 days of fungal growth, although that of rotten odorants increased markedly with growth. Production of moldy odor by fungi seems to be regulated by a different metabolism than rotten odor.
