  • 摘要:Commercially available margarines and low fat spreads in Czecho Slovakia, Swizerland and Italy were collected, and examined for quality. 1) There were 3 samples for lipid content and 8 samples for water content among 10 samples of margarine in Czecho Slovakia, and one sample for water content among 5 samples of margarine in Swizerland, those were deviated from the international standard for margarine (lipid: above 80%, water: below 16%). 2) In Czecho Slovakia and Swizerland, nearly all samples of margarine and low fat spread were fortified with vitamin A and D3. Howerver, in Italy, these vitamins were lacking. 3) In Czecho Slovakia and Swizerland, sorbic acid was not present in margarine, but was so in about half the samples of low fat spread. In Italy, sorbic acid was found in all margarine and low fat spread samples. 4) In Swizerland and Italy, respectively, there were 3 samples each containing above 40% linoleic acid, but this was not the case in Czecho Slovakia.
