摘要:Mineral contents in school lunches were measured. The measured values of calcium, phosphorus, iron, sodium and sodium chloride were similar to the calculated ones based on Standard tables of food composition in Japan, 4th ed . However, potassium was about 80% of the calculated value, suggesting the loss of the metal during cooking process. Thus, the school lunches tested tended to be deficient in potassium compared with sodium. It is important to devise menu for potassium supply. Each value of the mineral contents in the school lunches was almost sufficient as dietary allowances for children.
