摘要:60 Brands of shortening (kneaded, 30; unkneaded, 23; fluid, 7) and 25 brands of refined lard (pure, 12; prepared, 13) were collected, and used for analyzing nickel, iron, copper and lead content. 1) All samples comformed to the Japanese Agricaltural Standard for shortening or refined lard. A hardened oil was found to be blended in most of the shortening except for a few samples comprised mainly of laurin oils, but not significantly in refined lard. 2) Nickel concentration was only 0.06ppm or less in shortening and 0.04ppm or less in refined lard, if detected at all. Notably, a detectable amount of nickel was found in some pure lards quitely free of hardened oil. Iron and copper were present at 0-0.27 and 0-0.06ppm in shortening and 0.01-0.17 and 0-0.03ppm in refined lard, those levels being less than in margarines.
