摘要:Activities of lytic enzymes, lysozyme, N-acetylmuramidase SG and achromopeptidase were examined and compared with Lactobacillus jugurti OSI-1, Streptococcus|lactis OSI-1, 81 and Streptococcus cremoris OSI-1, 18 as lactic acid bacteria in 30mM Tris (hydroxymethyl) aminomethane-HCl buffer. N-acethylmuramidase SG and achromopeptidase had completely lytic activities against the cells of above three strains. The order of lytic activities was N-acethylmuramidase SG>achromopeptidase>lysozyme in L. jugurti OSI-1, and was achromopeptidase>N-acetylmuramidase SG>lysozyme in S. lactis OSI-1, 81 and S. cremoris OSI-1, 18. The minimum concentration for maximum activities of lytic enzymes was 5μg/ml in N-acetylmuramidase SG and 10μg/ml in achromopeptidase. Lysozyme had no completely lytic activity but their activities accelerated in the presence of α-amylase. These lytic activities of enzymes against lactic acid bacteria were partly suppressed in the presence of 3mM MgCl2·6H2O and 0.58M sucrose in the buffer used.
