摘要:The monoglycerides in various ice creams were determined by gaschromatographic method as TMS derivatives (for total monoglyceride analysis) and isopropyridene derivatives (for 1-position monoglyceride analysis), and the position and fatty acid moiety of ester bond in monoglycerides were examined. The total contents of monoglycerides in various ice creams were 86-300mg/100g ice cream (average 160mg/100g ice cream), which were independent of their lipid contents. The major monoglycerides contained in these samples were monostearin, monopalmitin and monoolein. Most of monoglycerides had 1-position ester bond.
