摘要：O abacaxi IAC Gomo de mel apresenta gomos proeminentes que podem ser destacados com as mãos. A polpa é amarela, suculenta e muito doce. A polpa apresentou 1,4 mg de ácido ascórbico/100g de polpa e teor de sólidos solúveis em ºBrix igual a 15,7. A peroxidase do suco de abacaxi apresentou atividade ótima na faixa de 45ºC a 50ºC e pH 4,5. A enzima mostrou-se estável na faixa de pH 4,0 a 9,0 retendo mais de 80% da atividade após 24 h de tratamento a 50ºC. Após 30 minutos de tratamento em temperaturas inferiores a 50ºC, a peroxidase permaneceu estável retendo mais que 90% de atividade, sendo que após 30 minutos à 70ºC a atividade residual foi cerca de 15%. A peroxidase foi inativada após 120 segundos de tratamento a 90ºC e não foi observada regeneração após 3 e 24 horas de incubação a temperaturas de 5ºC e 25ºC.
其他摘要：The IAC Gomo - de - mel presents segments which can be separated by hand. The pulp is yellow, succulent and very sweet. The pulp showed 21,4 mg ascorbic acid / 100g of pulp and 15,7 ºBrix of soluble solids. The pineapple juice peroxidase presented optimum activity at 45 to 50 ºC and pH 4.5. The enzyme remained stable at pH 4.0 to 9.0 and retained more than 80% of its activity after 24 hours of heat treatment at 50 ºC. The enzyme remained stable after 30 minutes of treatment at temperatures inferior to 50ºC, retaining more than 90% of its activity and after 30 minutes at 70ºC the residual activity was 15%. The peroxidase was inactivated after treatment at 90ºC for 120 seconds and no regeneration was observed after incubation at 5ºC and 25ºC for 3 and 24 hours.
