摘要：La producción de almidón agrio de yuca en el departamento del Cauca está conformada por un complejo sistema de agroempresas procesadoras, agricultores, intermediarios, empresas fabricadoras de equipos y organizaciones que prestan servicios de apoyo. Los recursos locales como el saber-hacer, las redes de actores, el producto, las acciones colectivas, las condiciones agro-ecológicas específicas, son los factores dinamizadores que han permitido la evolución y crecimiento de esta compleja concentración de agroempresas rurales. En esta comunicación se describe la historia y evolución del sistema, así cómo los recursos locales que se han conjugado para su construcción y evolución.↓La production d’amidon aigre de manioc dans le département du Cauca met en oeuvre un système complexe d’agro-entreprises, transformateurs, agriculteurs, intermédiaires, équipementiers et organisations qui offrent des services de soutien à la filière. Les ressources locales comme le savoir-faire, les réseaux d’acteurs, les produits, les actions collectives et les conditions écologiques spécifiques ont permis l’évolution et le développement de cette concentration complexe d’agro- entreprises rurales. Dans cette communication, on décrira l’histoire et l’évolution de ce système et comment les ressources locales se sont conjuguées pour sa construction et son évolution.
其他摘要：The production of bitter starch from cassava in the department of Cauca involves a complex system of agro-enterprises, processors, agriculturists, intermediaries, equipment-manufacturers and organizations that offer support services. Local resources like know-how, the networks of actors and their history of collective action, the product, and specific ecological conditions have allowed the evolution and growth of this complex concentration of rural agro-enterprises. This communication describes the history and evolution of the system, and how local resources have been brought together in that evolution.
