摘要:This paper follows recent discussions about the role of gastronomy in the construction of culinary national identities in the nineteenth and twentieth centuries, focusing on the construction of late gastronomic Canary nationalism. It examines national and regional cookbooks —aimed mainly at a female audience— and extends the study to the kitchen, analysing the effects of cookery bestsellers on the diet of the social elites of the Canary Islands and gauging the impact of other influences like British gastronomy, through research on handwritten recipes in family archives. Finally, the transmission cycle of this domestic knowledge within the female socialisation universe will also be analysed.
