其他摘要:Thawing of frozen blocks by water aspersion is studied theoretically and experimentally. Measures are done over a test substance and with minced boneless meat. The heat balance for three - dimensional heat transfer with variable thermophysical properties is solved employing explicit finite differences. Experimental determinations are performed in a specially designed model equipment, in which different operating parameters are tested. Temperature profiles, thawing times, as well as regressions.
