摘要:The aim of this paper is to present the result of a research carried out in a small coffee producer cooperative located in Escuintla, a county in the Mexican State of Chiapas. This research reviews and documents the experience of this cooperative, the certification for their coffee production system under organic and fair trade standards. Information is documented in its quality management system, mainly the internal control, where the results notice the strategy followed in the design of its internal control system which allowed this organization to achieve the certification of its coffee production.
