  • 摘要:The packaging of meat provides the same or similar benefits as other types of food packaging. Though air- permeable packaging is most prevalent but the advancements in meat packaging by active, antioxidant, antimicrobial and nanotechnology has modified the area of meat packaging. This article explores the novel technological interventions in packaging of meat to enhance the quality and safety of meat products. Innovative measures including active packaging, intelligent packaging, antioxidant packaging, antimicrobial packaging, modified atmospheric packaging (MAP) and nanotechnology are used in packaging of meat. These packaging methods are environment benign and ecofriendly. For food microbial safety and achieve longer shelf life, antimicrobial and antioxidant active packaging have been developed which positively change the conditions of the package to effectively improve the safety and quality of the food therein. Intelligent packaging is an emerging and exciting branch of packaging science and technology that offers great opportunities for enhancing food safety, quality, and convenience, and consequently decrease the number of retailer and consumer complaints. RFID technology is a form of electronic information that can be applied in intelligent packaging. Advancements made in nanotechnology field has modified the packaging industry to a greater extent. The most commonly used cellulose based food packaging substrate is cellophane, which is also referred to as regenerated cellulose in film.
