  • 摘要:This study was conducted to evaluate the sanitary, chemical and microbiological quality of buffalo�s and cow' raw milk. A total 100 samples of raw milk including 50 of buffalo's milk} 25 each of rural and urban} and 50 of cow�s milk} 25 each of rural and urban {were collected randomly from small holder dairy farmers at local market and supermarkets in Alexandria Governorate. Each sample was tested for heat treatment and those proved to be raw were subjected for examination and found that all milk samples were raw. The samples were analyzed for bacteriological properties and obtained results showed that the mean values of Total aerobic bacterial count, Coliforms, Staphylococcus aureus, Enterococci ,Yeasts and Moulds count in rural and urban buffalo�s milk samples were 3.2x105 � 0.53x105, 3.8x105 � 0.44x105; 1.6x105 � 0.28x105, 3.5x104 �0.88x104; 1.8x104 � 0.18x104, 1.0x104 � 0.17x104; 6.0x104 �2.9x104, 1.1x105�0.44x105; 6.1x103�0.42x103, 6.0x103�0.52x103 and 2.3x102� 0.54x102, 3.2x102 � 0.35x102cfu/ml, respectively while the respective counts in examined rural and urban cow�s milk samples were 2.9x105 � 0.20x105,4.2x105 �0.44x105; 8.9x104�1.7x104,6.2x104�0.48x104;1.9x104�0.24x104,1.9x104�0.26x104; 1.6x105�0.68x105,1.0x105�0.28x105; 4.7x103�0.47x103,7.1x103�1.1x103 and 3.0x102 � 0.53x102, 2.3x103�0.51x102cfu/ml, respectively. So these results observed that rural buffalo�s milk was higher in Coliforms and Staphylococcus aureus count than urban milk while rural cow�s milk was higher in Coliforms, Enterococci than urban milk. Also prevalence of some pathogens as E.coli and Staphylococcus aureus organisms was detected.
