摘要：A lo largo de la historia muchas civilizaciones han ocupado la península ibérica. De este conjunto de pueblos que dejaron su impronta en nuestro legado cultural, destacan los árabes, cuya área de influencia se extendió a lo largo de 8 siglos y que, sobre todo en la parte sur de la península, dejaron una imborrable huella que ha permanecido hasta nuestros días. En el territorio llamado al-Ándalus, los árabes incorporaron multitud de avances en los campos de la agricultura, la arquitectura o la gastronomía, entre otros, siendo éste último el objeto de estudio. A lo largo de la investigación, se trata el análisis de los usos y costumbres de la gastronomía de al-Ándalus, así como un estudio de todos aquellos elementos que los árabes introdujeron o cuyo uso intensificaron en la península. Por otro lado, mediante el cotejo de 4 recetarios, se ha tratado de establecer un inventario de ingredientes que fueron introducidos en la península ibérica por los árabes y que hoy en día permanecen en el corpus gastronómico de Granada.
其他摘要：Along the history there have been many civilizations which, either completely or partially, have occupied the Iberian Peninsula. Among this collection of peoples (Greeks, Celts, Romans, Phoenicians, etc.) that left their own mark in our cultural legacy, the Arabians, whose influence spread along 8 centuries, stand out, especially in the south part of the Peninsula, where they left an indelible mark that has remained to the present day. Therefore, in the area which was then called al-Ándalus, the Arabians incorporated a great number of breakthroughs in agriculture, architecture and gastronomy among other areas, being gastronomy the subject matter. Along this process of research, there is the analysis of the customs and practices of the al-Andalus gastronomy, as well as a research on all the elements (ingredients, preservation and elaboration techniques, agricultural innovation, etc.) that the Arabians introduced or intensified their use into the Peninsula. Furthermore, through the comparison with 4 recipe books, an inventory of the ingredients introduced by the Arabians and the ones that now remain in Granada’s nowadays gastronomy has been stablished.
