摘要：Não tendo a riqueza alimentar do Natal ou da Páscoa, o manjar cerimonial do S.João no Porto, como o de outros santos populares é isso mesmo: popular.Na véspera, sardinha assada, caldo verde, febras de porco, pimentos, pão e muito, muito vinho.O cordeiro salta do colo do santo e é imolado no dia seguinte com batatas assadas e arroz de forno.Mas noutros alimentos, que nesta noite o não são, reside também a simbologia das festas sanjoaninas: erva-cidreira, manjerico e alho-porro, atores principais da noite de S.João, que protegem e transmitem mensagens fraternas.Alimentos simbólicos, como simbólicos são também a água das fontes e o fogo das fogueiras e os balões que iluminam o céu nesta noite de infindável madrugada.É a vivência atual do S.João no Porto que constitui o tema central deste estudo, através de um passeio pela cidade na sua noite mais longa, identificando através desse percurso o que de mais singular a cidade manifesta e oferece, quais os comportamentos sociais e alimentares desta festa e a respetiva simbologia.
