摘要：Neste artigo, apresentamos uma reflexão advinda de uma pesquisa sobre os doces de Pelotas, cidade ao sul do Brasil. Esses doces se apresentam como doces finos (ou de bandejas) e doces de frutas (ou coloniais). A origem desse saber doceiro feminino pode ser encontrada entre as jovens filhas de grandes estancieiros e donos de charqueadas, saberes que foram mobilizados quando, em razão da crise do charque, foram necessários outros recursos para manter uma economia doméstica. As entrevistadas revelaram, pela lembrança, que a doçaria tinha (e tem) uma forte ligação memória-corpo, seja pelos gestos executados, seja pela memória olfativa e visual.
其他摘要：This study examines the confectionary industry of the City of Pelotas in southern Brazil. These sweets are presented as gourmet creations (or on trays) and fruit sweets (or colonial sweets). The origin of this female-oriented confectionary expertise can be found among the young daughters of large ranchowners and jerked beef manufacturers. This know-how was acquired and developed when, because of a crisis in the beef jerky market, it was necessary to find other sources of income to maintain a healthy domestic budget. The interviewees revealed, from reported memories, that the confectionery had (and has) a strong memory-body connection; either through familiar movements and gestures, or through visual or olfactory memory.
