摘要:The consumption of fresh vegetables in Poland, which has been systematically decreasing for a dozen or so years, makes a need for a thorough analysis of the conditions of the trends. One of the main factors influencing the size and structure of consumption of a selected group of products is supply. On the other hand, the level of demand determines the level of production. The aim of the study is to present the relations between the level of changes in consumption and changes in the area and volume of production of selected vegetable species in Poland in 2008–2017. The analysis was based on secondary data, contained in the publications of the Central Statistical Office. To determine changes in the production and consumption of vegetables were used volatility coefficients and dynamics indicators. In the analyzed period, the harvest of vegetables increased, while their consumption decreased. Differences between the level of production and consumption increased the most in provinces, which had the highest share in the harvest.
