摘要:{Abstract } This article wants to show how statistic control process can be applied at a chickens’ slaughterhouse, that is located at Paraná’s west. The chicken’s carcass was chose because it’s necessary to create and to apply a control system that can make the industrialization process according the alimentary security laws. There were investigated the water temperature at the pre-frozen, water temperature at the frozen system, and the chicken’s carcass at the end the frozen system. The data were collected since January/2005 until May/2006. To analysis there were used the following methods: control graphics X and S, EWMA, {CUSUM} tabular and {CUSUM} mask V, according six sigma methodologies, to evaluate the quality process. Results from this study shows that the frozen process isn’t capable to produce chicken’s carcass according alimentary security, and shows that this process doesn’t use the statistic control. There were introduced an action plan to correct the problem that uses the total quality control.
