We promised you more pudding cookie recipes, so here they are!
Pistachio Pecan Cookies
(makes 4 1/2 dozen)
1/2 cup powdered sugar
1/2 cup margarine or butter, softened
1/2 cup oil (not olive)
1 teaspoon almond extract
1 to 3 drops green food coloring
2 eggs
3 3/4 ounce package instant pistachio pudding and pie filling
2 cups flour
1/2 teaspoon baking soda
1/2 teaspoon cream of tartar
1/8 teaspoon salt
1/2 cup chopped pecans
colored sugar
In large bowl, combine sugar, margarine, oil, extract, coloring, eggs and pudding mix. Mix well. Add flour, soda, tartar and salt. Mix well. Stir in pecans. Refrigerate dough for easier handling. Shape dough into 1-inch balls and roll in colored sugar. Place dough balls 2 inches apart on ungreased cookie sheet. Bake at 375 F for eight to 10 minutes or until golden brown around edges. Remove immediately and cool.
Lemon Pudding Cookies
1 cup Bisquick (reduced fat OK)
1 small package lemon instant pudding
1 teaspoon lemon zest
1 tablespoon lemon juice
1/4 cup canola oil
1 egg
Heat oven to 350 F. Mix ingredients by hand until soft dough forms a ball. Shape dough into 1-inch balls. Place dough balls 2 inches apart on ungreased cookie sheet. Bake until edges are light brown --- about eight minutes. Cool.
Lemon Butter Frosting
1 1/2 cups powdered sugar
3 tablespoons softened butter or margarine
1/2 teaspoon lemon zest
1 to 2 tablespoons lemon juice
1 to 2 drops yellow food coloring
Mix sugar and margarine with spatula or mixer. Stir in zest, juice and coloring.
Frost and enjoy.
Sugar Cookies
2 eggs
2 sticks margarine
1 cup powdered sugar
1 cup white sugar
1 cup oil
1 box instant vanilla pudding mix, 3 1/2 ounces
1 teaspoon cream of tartar
1 teaspoon salt
1 tablespoon vanilla
1 teaspoon soda
4 1/2 cups flour
May add extra flavoring such as almond or butter.
Mix ingredients. Chill overnight. Roll into balls and press down with a glass dipped in sugar. Bake on greased cookie sheet in 350 F oven for eight to 10 minutes. These are soft cookies.
