DEAR ANNE AND NAN: Does anyone have a good old-fashioned recipe for rocky-road candy made with walnuts, large marshmallows and chocolate (milk chocolate or semisweet)? Neither Campfire Marshmallows nor Ghirardelli Chocolate Co., of San Leandro, Calif., have it. The proportion of the ingredients is vital. Are the large marshmallows left whole? --- MRS. J. DEAR MRS. MILLS: Hope this is what you are looking for. We suggest you buy miniature marshmallows rather than large marshmallows, which you would have to snip into bite-size pieces.

ROCKY ROAD CANDY

1 (10 ounces) bar Ghirardelli milk or semisweet chocolate (a 12 ounce bag of semisweet chocolate chips may be substituted)

1 1/2 cups mini marshmallows

1/3- 1/2 cup chopped walnuts

Melt chocolate in double boiler over hot, but not boiling, water. Pour enough chocolate into a buttered one-quart loaf pan to cover the bottom. Top with marshmallows. Combine nuts with remaining melted chocolate and pour over the marshmallows. Spread top evenly. Cover and refrigerate until firm. Cut into squares.

P.S.: Ever had your chocolate clump and harden while melting it on top of the stove? The solution is to stir vegetable oil, at a ratio of 1 tablespoon of oil to 6 ounces of chocolate, into the "ruined" mess. Bingo! Disaster averted.
