owns the city's coolest restaurant, The Brasserie, which is part of The Columbus Hotel. 'The Brasserie is a relaxed and stylish restaurant. We have a great terrace at the
front which gets the sun all day,' says David. 'I love sitting outside enjoying my favourite salad while looking
out over the gorgeous Princess Grace
Rose Gardens.'
Special Chicken Caesar Salad
Known as 'un paillard de poulet' in France, this one is David's favourite dish. It's an excellent choice for a sunny day and very popular with his stick-thin girlfriends as it is low in calories.
YOU WILL NEED
2 eggs
4 x 200g/7oz
chicken breasts
25g/1oz parmesan
cheese, finely grated
50g/2oz white
breadcrumbs
25g/1oz flour
25ml/1fl oz olive oil
15g/1/2 oz butter
mixed bag of salad for four people
50g/2oz cherry tomatoes
25g/1oz cooked green beans
2 limes
Dressing
50ml/2fl oz virgin olive oil
1 tbsp honey
juice of 2 lemons
salt and pepper to season
First, beat together the eggs. Then slice the chicken lengthways and coat the chicken breasts in the beaten egg. Next, cover them with flour, grated parmesan and breadcrumbs. Shallow fry the chicken
in some oil and butter for
10 minutes each side
until golden brown.
To make the dressing simply mix the oil, honey, lemon juice, salt and pepper together.
Mix salad leaves with cherry tomatoes, green beans and the dressing and arrange the salad on the plate with the chicken on top. Serve with lime wedges.
Caipirinha
YOU WILL NEED
1fl oz Cachaca (or if you can't find it, a good vodka)
2 fresh strawberries
2fl oz of strawberry juice
Mix the ingredients in a cocktail shaker full of ice - then pour in to a frosted glass.
Another favourite
Chocolate Martini - vodka, white Creme de Cacoa, a drop of Martini served in a frosted glass with a sprinkle of chocolate powder on top.
