Brew it better - Letter to the Editor
Rebecca Pierce RallIn "Green Tea Alternatives" (News and Notes, April 2002), it states that the flavor of white tea is "strong; somewhat bitter" and that the "taste is similar to black tea." This is undoubtedly the result of improper brewing. White tea should not be subjected to the same brewing technique used for a standard black tea bag. Instead, the water should be almost boiling (about 180 degrees), and the tea should be steeped for a minute or less. This results in a delicate, floral-scented tea with no bitterness, and the caffeine content is low enough that I often can enjoy it in the evenings.
