摘要:The study was carried out in capybaras from Embrapa Clima Temperado experimental farming, Capão do Leão - RS, Brazil. The objective was to determinate, in intact males and females capybaras bred in semi-intensive farming, values of animal’s exterior, and carcass and cuts yield analysis. Thirty five capybaras, 20 females and 15 males at commercial slaughter phase, were slaughtered at age of 12-18 months and mean live weight of 38.96 kg. The capybaras were fed with corn, residue from the rice harvested and cultivated forages. There was no differences between males and females for the animal’s exterior and carcasses evaluations, except for leg length which was greater (P<0.01) in males than in females. It was obtained a cold carcass dressing yield of 58.26%, with no differences between sexes (P>0.05), considered a better performance than those commonly reported for ruminants. The mean percentages of carcass muscle, fat and bone were, respectively, 68.61%, 19.45% and 11.93%, considering the data as a whole. Nevertheless, the regional composition varied between sexes. The percentages of shoulder and loin observed in males, 17.97% (P<0.05) and 9.14% (P<0.01), respectively, were greater than in the females, which showed values of 16.97% and 7.87%, respectively. It is concluded that excellent carcass dressing and meat yields can be attained in intact male and female capybaras in the commercial slaughter phase, raised in semi-intensive farming system.
