alike, but what accounts for
the vast differences in diet
quality? Diet quality depends on the
foods eaten, how they are stored
and prepared, and other factors,
such as quantities and proportions
that influence the nutrient content of
meals. Some people¡¯s diets are rich
in fruits and vegetables, while others
are high in grains, meats, or
dairy products, and still others consume
primarily fried foods. Some
dine out frequently, while others
produce and prepare their own
food. This article examines the role
that nutrition knowledge plays in
shaping people¡¯s diets.
