meals consumed in schools,
met some but not all of the
recommendations for a healthy diet,
according to a 1992 School Nutrition
Dietary Assessment study about the
foods and nutrient content of meals
offered to and consumed by students.
While school lunches met or
exceeded the required one-third of
the Recommended Dietary Allowances
(RDA¡¯s) for key nutrients,
they offered 38 percent of calories
from fat and 15 percent of calories
from saturated fat¡ªconsiderably
more than the recommendation that
30 percent or less of calories come
from fat and less than 10 percent of
calories come from saturated fat as
adopted in the 1990 Dietary Guidelines
for Americans. The study also
showed that lunches provide too
much sodium (an average of 1,479
milligrams)¡ªnearly two-thirds the
National Research Council¡¯s recommendation
for daily intake.
