In Québec, there is a First Nations garden at the Montréal Botanical Garden. It presents the ways of life of Québec’s Amerindian nations. Food that is respectful of the environment, the rhythm of the seasons and animal populations is a major dimension of this garden. Through their practices, the Amerindians convey values and concerns that inspire reflection on current food-health issues. The Canadian Research Chair in Environmental Education conducted a large study on these questions, under the theme of eco-eating. The First Nations Garden study brought out
