  • 摘要:Celiac disease is characterized by small-intestinal mucosal injury and nutrient malabsorbtion in genetically susceptible individuals in response to the dietary ingestion of wheat gluten and similar proteins in barley and rye. At present, so called pseudocereals appear to be the perspective group of crops for gluten-free diet for celiac disease. The aim of our study was to compare various methods of detection of celiac active proteins in different genotypes of agricultural plants. The results of the fractional composition of proteins confirmed that analysed genotypes of buckwheat, amaranth and chickpea are characterised by a low content of allergic proteins, which was confirmed also by electrophoretic profiles of storage proteins with the help of ISTA SDS PAGE method. ELISA assay confirmed the possibility of pseudocereals and legumes for application in production of foodstuffs suitable for patients suffering from celiac disease. Results of the present study also confirm that ELISA assay is a more objective method in comparison to SDS PAGE.
