摘要:This study was based on two objectives. At first, fruiting bodies of Pleurotus ostreatus, an edible mushroom of high nutritional value, were produced by semi-solid fermentation. Wheat straw was used as a lignocellulosis by-product. The other aim was to determine the content of biologically active substance beta-1,3-D-glucan, which is called .pleuran“, in lyophilized fruiting bodies. (1,3)-b-glucans are polysaccharides distributed especially in algae, fungi and yeast, but also in higher plants. They serve a variety of biological functions. They form the major structural components of cell walls, act as storage carbohydrates and also have a protective role. b-glucans thus have medicinal implications too – potent antitumour properties of polysaccharide fractions extracted from certain strains of mushrooms were described in various studies and assigned to 1,3/1,6-b-D-glucan. This polysaccharide substantially enhances the function of the immune system by activating macrophages, belonging to primary immune defence system.
