摘要:Venison has always been a certain culinary attraction especially if we consider nutritional values which consist of a high quantity of proteins with less fat of favorable fatty- acid content. It should certainly be added to that that the game from our hunting grounds still resides in clean nature (NJARI, 2004). Inspection of venison is also done according to the regulations of the Ordinance on the methods of conducting controls for Trichinella in meat (National Gazette No. 62/08), so it can be inspected only in authorized veterinary orga- nizations. A sample of diaphragm, tongue or muscles of front legs of wild boars, roe deer and deer game of about 100 grams of weight is sent for inspection. A reference method for the proof of prevalence of Trichinella spp. parasite in venison is “articial digestion” which has also been proscribed by the Ordinance (National Gazette No. 62/08). People become infected by Trichinella most frequently by preserved meat products and, as a rule, by sausages or sausage mixture which contains venison. Data on venison inspection on Trichinella spp. from two counties – endemic (Vukovar- Srijem County) and Zagreb County in the period from 2008 to 2010 were col- lected in this paper. In both counties there were inspected 1483 samples of venison in total: wild boars, roe deer and deer game. There were six positive samples and they were all from the endemic area. A special emphasis has also been put on the even more frequent appearance of developing forms of parasite Distomum muscularis suis, mesocercariae Alaria Alata in samples of venison as a chance nd during the inspection for Trichinella spp. Alaria Alata has been proven in two cases of inspected samples (both in Zagreb County). It should be mentioned that formerly rare ndings of this mesocercariae are more frequent nowadays and they represent a real threat to human health. Therefore they require enactment of legal regulations of higher quality which will be basis for evaluation of health safety of venison for this parasite specically.
