  • 摘要:Nitrogen is the fundamental element in plants nutrition, with a mainly plastic and construction role of organized matter molecules. Plants nutrition with nitrogen is made through combinations with nitric nitrogen and ammonia nitrogen. Acid environment allow nitric nitrogen absorption, and alkaline environment allows ammonia nitrogen absorption. For the synthesis of amino-acids with further formation of proteins, plants use only reduced nitrogen. Nitrates reduction to nitrites is catalyzed by nitrate and nitritreductase enzymes in two stages. Excessive accumulation of nitrates in plants occurs due to modern agriculture, due to fertilization with high amounts of nitrogen or their irregular application, in conditions of nebulosity, humidity and temperature stress and nutrition unbalance with other elements. The factors allowing nitrates agglomeration in plants and their transformation in nitrites are: culture, cultures nitrogen nutrition, weather conditions, storing conditions, preparation methods for consumption. Consequently, the paper describes the toxic effects of nitrates accumulation in plants on human and animal organisms.
