摘要:The article shows the results of the microbiological quality research relative to 109 samples of the most important home-made milk products sold by individual producers on Zagreb market. Microbiological requirements were no satisfiing in 87.5% of sour and sweet cream samples, 50% of butter, 47.6% of kajmak. 64.5% of soft and fresh cheeses, 52.4% of hard cheeses and 33.3% of cream cheeses samples - that is 57.8% of mentioned home-made milk products sold at the Dolac market in Zagreb. Among microbiologically unsatisfactory samples 16.5% contained coagulase-positive Staphylococci, 5.5% sulphoreducing Clostridia, 31.2% Escherichia coli, 16.5% Proteus species. Half of cream samples contained yeasts and 20.7% of butter and kajmak samples lipolytic Bacteria. The results indicate the fact that regulations did not take into consideration the circumstances in the individual sector of production.
