摘要:Toxic effects of aflatoxin B1 on Streptococcus lactis strains 507 and 509 in milk are presented. Comparison of the inhibition of growth with the decrease in viability showed that aflatoxin B1 at 2.5 and 5.0 μg/ml did not inhibit growth during the 20hr of incubation. Streptococci incubated at 30 °C demonstrated a marked decline in viability with AFB1 at 100 and 150 μg/ml. Total inhibition of growth of S. lactis 507 and 509 is not reached even with 150 μg/ml AFB1. As a result of the decrease in viability the milk curdling with both strains: 10, 100 and 150 μg/ml of AFB1 was delay from 2 to 9 hours, approximatively.
