摘要:In this study, polyphenols were extracted fro m margins in order to promote them as natural antioxidants and co mparing it with a synthetic antioxidant Tert-butylhydroquinone (TBHQ). A concentration of 100 ppm of polyphenols or TBHQ was added to sunflower oil. To quickly assess the effect of polyphenols on the stability of the oil, we conducted an accelerated oxidation by Rancimat at 110 ° C under an air flow of 20 l / h. Then the oil was placed under storage conditions in an oven (accelerated test at 60 ° C) for 35 days. The evolution of the oxidation state was measured by the peroxide (IP), acidity and specific extinction at 270 nm. The results showed that the oi ls containing antioxidants have undergone oxidative damage less pronounced than that o f the reference (no additives).
