  • 摘要:In Morocco there is a need, in terms of chemical characterization, concerning the classification of the Moroccan Picholine virgin olive oil according to different geographical areas. In addition to the chemical analysis of bases (acidity and peroxi de) we are interested in the fatty acid compositio n and application of chemo metrics coupled with infrared spectroscopy in order to discriminate between virgin olive oils in the Tadla Azilal region. A series of 142 samples of Moroccan Picholine olive cultivars were crushed in mills in the region of Tadla Azilal during two crop years; 2009/2010 and 2010/2011. The average acidity of olive oil coming from the plain is 2.0 in terms of oleic acid percentage. This acidity is 2.7 for the foothills case and close to the mountain oils value (2.6). The average index of peroxide is 13.5, 6.6 and 8.6 for respectively oils from the plain, the foothills and mountains. The chemical composition of fatty acids was determined using the gas chromatograph after bypass esters methyl. The oils of the mountain would be slightly richer in oleic acid (71.8%) compared to those of the plain (70.4%) and foothills (68.5%). The values of the average unsaturation index are strongly correlated with oleic acid levels. The principal component analysis (PCA) of olive oils shows that there is discrimination between the oils coming from the three geographical zones in the Tadla Azilal area
